Why We Still Run Businesses (And Why It Matters)

There's a pattern in consulting: someone runs an operation for a decade, gets good, gets out, and spends the next twenty years selling the memory of being good. The advice gets smoother every year while the ground truth underneath it drifts further away.

We took the other path. We still run businesses — restaurants, catering operations, field service work. The advice we give on Tuesday got tested in our own operations on Monday.

Why it matters to you

  • Current prices, current problems. We're buying the same proteins, paying the same insurance, and fighting the same labor market you are — this quarter, not in 2015.
  • We feel the advice. When we recommend a system, it usually already runs in one of our own operations. If it breaks at 7pm on a Saturday, we're the ones it breaks on first.
  • No theory tax. Recommendations that sound brilliant in a deck and die on the line don't survive contact with our own kitchens long enough to reach yours.

The trade-off, honestly

Running operations while consulting means we take fewer engagements and we're not always instantly available. We think that's the right trade. You get partners with skin in the same game, not a bench of analysts learning your industry on your invoice.

It's the same reason our software exists: we built tools like our costing and free calculators because we needed them ourselves. The ones that survived our own operations are the ones we ship.
