AutoCAD for Operators: What Your Designer Might Miss

A kitchen plan can be dimensionally perfect, code-compliant, and beautiful — and still be wrong. Designers work in plan view; your crew works in motion. Here's what we check on every drawing before a partner signs off, learned the expensive way.

Door swings versus reality

Every hinged door — walk-in, oven, lowboy, dish machine — sweeps an arc that plan view shows but people forget to walk through mentally. The classic miss: an oven door that, fully open, blocks the only path between two stations. Legal on paper, gridlock at 7pm.

Where does the cart go?

Deliveries, sheet-pan racks, banquet carts, mop buckets. Trace the path of a loaded speed rack from the back door to the walk-in. If it has to turn more than twice or pass through a cooking lane, the plan needs work. Racks and carts are the blood cells of a kitchen — the drawing needs veins, not just rooms.

Power and drains where the work is

Outlets drawn to satisfy code are not outlets drawn to match your equipment list. Count what each station plugs in — including the stuff that isn't on the equipment schedule, like phone chargers and label printers. Floor drains belong where water actually gets dumped, not where they were easy to draw.

The reach test

Stand at each station in your head and reach: cold storage, dry goods, plates, the pass. Anything a cook touches every ten minutes should be within two steps. We once watched a layout burn two hours of labor a shift on exactly this — the plan had storage, just in all the wrong places.

Sign-off is an operator's job

Your designer is responsible for code, structure, and drawings your contractor can build from. Only someone who has worked a rush can judge whether the room will cook. Walk the plan at full speed in your imagination — service, delivery, breakdown, cleaning — before anything gets poured or bolted down. Changes cost hundreds on paper and tens of thousands after rough-in.
